Life has been hectic with a newborn and cooking has hit the back burner. My children have been living off of frozen meals, soup and sandwiches. Practically, anything that I can whip up with a press of a button.

However, What a Good Eater! cookbook has saved the day.  What a Good Eater! is a cookbook of baby and toddler recipes with healthy herbs and spices to add flavor and broaden your baby’s palate. It’s a guide for parents to confidently feed their babies and toddlers wholesome, healthy, age-appropriate foods which help promote a diverse palate right from the get-go. It’s a great gift for the holidays as well as baby showers! Although, my children have outgrown the baby and toddler phase, What a Good Eater! cookbook still had plenty of recipes to pick from.

My boys (ages 8 and 5) and I browsed the recipes which was an enjoyment on it’s own. The pictures of each recipes is vibrant and mouthwatering beautiful. It was no surprise when they decided on Grandma’s English Muffin Pizzas.

Ingredients:

  • 6 whole grain English Muffins (1 package), sliced in halves
  • 3/4 cup tomato sauce (use your favorite store-bought brand, or make your own large batch of sauce)
  • 3/4 cup shredded mozzarella cheese
  • 3/4 cup fresh ricotta cheese
  • 5 cherry tomatoes, sliced into thirds
  • Drizzle (approximately 1 tablespoon) of extra virgin olive oil

  1. Preheat the over to 375.
  2. Arrange the English muffin halves in a single layer on a baking sheet (you should have 12 pieces).
  3. Spoon approximately 1 1/2 – 2 tablespoons of sauce onto each of the 6 English muffins, gently spreading with the spoon to cover. Top each one with approximately 2 tablespoons of shredded mozzarella cheese.
  4. Spread 1 1/2 – 2 tablespoons of ricotta cheese onto each of the remaining 6 English muffins, then top with piece of sliced tomatoes, and drizzle with olive oil. img_2699
  5. Bake the pizzas for approximately 10 minutes or until the cheese starts to bubble.
  6. Switch your oven to broil mode, and broil 1-2 minutes or until the cheese starts to lightly brown. Remove from the oven, allow to cool, then serve. Buon appetito!

Of course, these were a hit! We will be adding these to our go-to meals. It was simple and quick (and … healthy!). I look forward to adding other ingredients (maybe some olives, peppers, and mushrooms?) to these English muffins too! Another thing that I’ve taken away with this kid friendly recipe is, it will be an awesome birthday party activity! What kid doesn’t enjoy making their own pizza?
